How to Make Fried Ice Cream
Things You’ll Need
• Wax paper or plastic wrap
• Ice cream scooper
• 1 qt. of vanilla or other flavored ice cream
• 1 cup crushed frosted cornflakes
• 1 cup sweetened coconut flakes, chopped walnuts or cookie crumbs
• Shallow dish or baking pan
• 2 large eggs
• 2 tbsp. of sugar
• 4 cups of vegetable oil
• Spoon or Spatula
Tear off 1 1/2 feet of wax paper or plastic wrap, and place it flat on the counter.
Form four large balls of ice cream with an ice cream scooper. Place the balls on the wax paper or plastic wrap, then transfer them to the freezer and freeze for at least two hours.
Mix the crushed frosted or plain cornflakes in a bowl with the coconut flakes, chopped walnuts or cookie crumbs. Instead of coconut, walnuts or cookie crumbs, add 4 oz. of cinnamon and sugar to the batter.
Spread the cornflake mixture in a shallow dish
Beat the eggs with the sugar in a large bowl with a whisk or fork.
Remove the ice cream balls and roll each one in the egg mixture.
Roll each ice cream ball into the cornflake batter.
Transfer all battered ice cream balls back to the freezer for one hour. If you aren’t going to serve the deep-fried ice cream right away, wait until close to serving time before proceeding to the next step.
Heat the vegetable oil in a frying pan at 400 degrees Fahrenheit after the ice cream balls have been in the freezer for at least 50 minutes.
Place each ice cream ball in the frying pan one at a time. Fry for 30 to 60 seconds, or until each ball is golden brown.
Remove from oil with spoon or spatula, and place into a dessert bowl. Drizzle the fried ice cream with chocolate sauce, honey or whipped cream, if desired.
